P2V W2K3 Svr with iSCSI Attached LUN's

Looking for some advice on the following, please?

Would like to plan converting a Physical W2K3 Std Server that currently has LUN's presented over iSCSI.  My plan is to convert the Server and it's local disk using VMware Converter, but how do I present the iSCSI LUN's to this Virtual Machine? What hardware/configurations do I need to consider in ESXi 5.1 to accomplish this?  Would I need a dedicated physical network adapter on my ESXi host to allow iSCSI traffic or Fibre Channel on option either?
